There are nights where I don’t feel like cooking, generally those Thursdays and Fridays where the week begins to drag and the weekend is almost tangible but just out of reach. Sometimes the inclination to not cook strikes at the beginning of the week. Even though these nights leave me – albeit briefly – with a lingering sense of guilt for not “making” dinner, I’ll still put together a small plate: fruit, cheese, maybe some nuts or bread. Not a significantly balanced meal, but when the thought of making dinner is the last thing on my mind, the below suffices.
